Ceviche is something I eat at least three times a week. I love the flavors and love that I can eat it whether I am on an all protein day or add a bunch of veggies if I am on a protein and veggie day. In my opinion it is just a great thing to always have around and also keeps you full since it is loaded with healthy, virtually fat free protein. Although there are a million varieties of ceviche out there, this is the recipe I find myself using most often.
Dukan Diet Simple Fish Ceviche
Dukan Phases: Attack Phase, Cruise Phase, Consolidation Phase, Stabilization Phase
Servings: 8
Serving Size: 4 oz fish
Nutritional Info: 97 calories, 1.2 g of fat, 0 g carbohydrates, 0 g dietary fiber, 22.1 g of protein
Ingredients
2 lbs of firm, fresh red snapper fillets, cut into 1/2 inch squares (or other firm white fish)
1/2 cup of lime juice
1/2 cup of lemon juice
1/2 red onion, sliced thinly
2 teaspoons of salt
Dash of ground oregano
Dash of hot sauce
Instructions
1. Add everything to a non-reactive dish. Mix together making sure the fish is completely coated with juice. Cover and refrigerate for at one hour.
2. Stir and let “cook” for at least one more hour. Serve with your favorite accompaniments.
