Mini Mushroom Frittatas

I just starting making mini quiches weekly to keep in the fridge as a quick snack or meal. I usually cook up any combo of eggs and veggies in muffin trays. They are really simple to make and make following the diet really easy no matter what phase you are in. During the Attack phase just use eggs and meat. The add veggies in future phases.

Sauteed Cocktail Shrimp

This is the time of year when it is probably time to get back on track and in a healthy eating routine. These shrimp are great to have around the house to do just that. Grab them for a quick snack anytime or double up and make them a complete meal. They get some extra added flavor from the herbs and olive oil instead of just a simple boil.

Dukan Sauteed Cocktail Shrimp
Dukan Phases: Attack Phase, Cruise Phase, Consolidation Phase, Stabilization Phase
Servings: 4 servings
Serving Size: 1/4 recipe
Nutritional Info: 130.1 calories,3.1 g of fat, 1 g of carbohydrates, 0 g of fiber 23 g of protein

Ingredients
1 tsp olive oil
1 pound jumbo shrimp, peeled and deveined
1 tbsp herbes de Provence
Salt and pepper

Instructions
1. In a skillet, heat the oil over medium-high heat.

2. Add the shrimp and herbes de Provence. Season with salt and pepper.

3. Cook until the shrimp are pink and cooked through. It should take about 2 minutes each side.

Shrimp and Tofu Miso Soup

Sorry for the lack of posts in the last week. I was suddenly struck with some sort of winter bug and haven’t been able to do much of anything. However I am finally back on the mend, luckily just in time for the holidays. Although I haven’t been able to eat much, this simple soup has been on the menu the last couple of days since I finally started feeling better. If you like miso soup, this is a great version with shrimp, tofu, and spinach.

Dukan Slow Shrimp and Tofu Miso Soup
Dukan Phases: Attack Phase, Cruise Phase, Consolidation Phase, Stabilization Phase
Servings: 6 servings
Serving Size: 1.5 cups
Nutritional Info: 241 calories, 5 g of fat, o g of carbohydrates, .22 g of fiber 42.3 g of protein

Ingredients

  • 6 cups vegetable broth (or chicken broth)
  • 1/4 cup soy sauce
  • 1 tablespoon ginger, peeled and minced
  • 1/2 tsp Asian chili paste
  • 5 tablespoons miso
  • 2 lbs shrimp, peeled
  • 1 cup tofu, cut into chunks
  • 4 cups spinach, trimmed and chopped roughly or seaweed (do not use during Attack Phase)
  • 1/2 cup green onion, sliced

Instructions

  1. Add the broth, ginger, chili paste, and soy sauce to a large pot. Bring to a simmer over medium high heat.
  2. In a small bowl whisk the miso with 1/2 cup hot broth.
  3. Add the mixed miso into the pan.
  4. Bring to a boil and add the shrimp, spinach, tofu, and green onions. Cook for about 5 minutes or until shrimp is cooked through.

Slow Cooker Shredded Beef

After a pretty indulgent weekend, I am going to eat only protein this week to kick start some weight loss and get things back to normal. I usually do this anytime I feel like I need to get back on track and need to lose a couple of extra pounds to get back to my goal weight. To kick this off, I made my favorite slow cooker shredded beef and you can be sure I will be eating it all week long.

Cauliflower Soup

I have been on a bit of a soup kick lately. It has started to cold, the air is crisp, its perfectly acceptable to bundle up in a scarf and hat and gloves. This cauliflower soup is perfect for this kind of weather. It’s light and creamy and delicious. You can add protein or more veggies – sauteed mushrooms, sliced steak, or some lean ham would all be delicious.

sarahHi! My name is Sarah and like many out there I have struggled for years to not just lose weight, but maintain my weight loss.
