Although I love a good breakfast pancake, sometimes there is nothing better than a savory pancake paired with your favorite grilled meats, smoked salmon, or light cheese. These simple chive pancakes are one of my favorites and incorporate the 2 tbsp. of oat bran you need daily.
Chive Pancakes

Ingredients
2 tbsp. of oat bran
1 tbsp. of nonfat powdered milk
1 egg
1/4 tsp. baking soda
Salt and pepper
1 tbsp. chives
Instructions
1. Whisk together the oat bran, powdered milk, egg, baking soda, salt, and pepper.
2. Fold in the chives.
3. Cook in a nonstick skillet coated with cooking spray. Cook for 3-4 minutes per side.
