It’s funny how sometimes when you are on a diet you put up your own self imposed blinders about food. For me, once I started the Dukan Diet, it felt like any type of creamy salad was out automatically so I never gave them a second chance. But I was missing out – switch the mayo for Greek yogurt and serve up in lettuce wraps or with a spoon, and it’s a perfect meal. I like my egg salad a little spciy so I add whole grain mustard and some chili flakes.
Dukan Diet Mustard Egg Salad
Dukan Phases: Attack Phase, Cruise Phase, Consolidation Phase, Stabilization Phase
Servings: 4

Ingredients
8 hard-boiled eggs, 3 whole eggs and 5 egg whites, chopped
3 scallions, finely chopped
4 tablespoons non fat Greek yogurt
2 teaspoon whole grain mustard
1/4 tsp cumin
1/2 tsp red pepper flakes
Salt and pepper to taste
For Cruise Phase and beyond
3 tbsp finely chopped parsley
1/2 cup chopped celery
Instructions
1. Mix together everything in a bowl. Taste and season with salt and pepper as needed. For more spice add more red pepper flakes. For a creamier salad, add more Greek yogurt.
2. Serve in lettuce wraps or own its own.
