Eggs are one of my go-to foods on the Dukan Diet. I eat them all the time and find you can create lots of low calorie, delicious, and Dukan friendly meals. And one of my favorite ways to eat eggs on the Dukan diet is by making various types of quiche. These one features collard greens, an excellent source of nutrients, but any dark leafy green would work. Paired with some onions and a little cheese and it makes a delicious meal. During the Attack phase consider replacing the veggies with another protein like lean ham or chicken.
Dukan Diet Collard Green Quiche

Ingredients
1 1/2 cups cooked collard greens
1/2 cup chopped onion
Salt and pepper
3 large eggs
2 egg whites
1/2 cup skim milk
2 tbsp reduced fat cheddar cheese
Instructions
1. Preheat the oven to 375.
2. Spray a saute pan with cooking spray and add the collard greens and onion. Cook for about ten minutes until everything begins to soften up.
3. In another bowl, mix together the eggs, egg whites, skim milk, salt, pepper, and cheddar cheese.
5. Add in the collard green mixture and pour into a round baking dish. Bake for 25-30 minutes until cooked through. Eat warm or cold.
